YW

So, we have some amazing Young Women in our ward, and I am blessed to be able to be involved with them. When they heard that my parents were leaving and I still wasn't supposed to be lifting the boys, a bunch of them called and offered to come over to help.

The boys loved the extra attention, and it was nice to me to spend some extra time with these awesome girls. An added plus is I now have people I trust, that the boys know, who I can call to babysit!

It's inevitable...

This is just what has to happen when you have three kids under three:


Yes, that is right, we are now officially van drivers.

I've been stressed about this for months (about 7 1/2 to be exact). Financially, buying a new car just wasn't in the plan right now. We tried to fit all three of our carseats in the back seat of our sedan, but they just wouldn't fit.

Then a couple of months ago, my sister in law suggested just buying new car seats instead of a new car...maybe if we could get some more narrow car seats, they would fit. So, after 4-5 hours of online research, we were SO HAPPY to find out she was right. Our back seat was 49" wide and we could buy three new car seats that were 47" wide total. I read about quite a few people who had fit three car seats in the back row of various different sedans.

So, I stopped worrying, started sleeping better at night and waited a few weeks to go buy the car seats.

Last week we went to Babies R Us to try the car seats in. We were actually hoping that we might be able to get by with only buying two new seats instead of three. So, we got all the seats and before paying for them went out to try them in the car. It was then that we realized that the middle latch (as well as the seatbelt hookup) is slightly off center, so the middle car seat CANNOT be exactly centered which means you can only have one other car seat next to it. There simply isn't room on one side or the other. Cory tried for almost an hour to make it work (remember these are the MOST NARROW carseats available), but there was no way it was safe no matter what he did. So, we left and I spent a few hours on the phone calling official car seat installation places (I didn't even know they had those, but there are people at the Fire Station, Dealerships etc who are certified to install carseats). I asked if they had ever seen three car seats in a row before...I even called 4-5 Chevy dealerships to see if they had ever seen in done in the Malibu. Everyone said that they had seen a booster, a toddler car seat, and an infant car seat, but never two toddler car seats and an infant car seat. Unfortunately, the boys just aren't big enough for boosters. They aren't even close. And since they are 5-10% for height, it will probably be a while. But even if we could have done the booster, all the Chevy dealerships I called said they had never seen it done at all in the Malibu b/c of the off center latch problem. So, that is how we ended up having to get a van...

We got a GREAT deal on the Honda Odyssey, and we actually really like it. It will be much easier to travel with kids, and has so many features (even as just the base model) that I don't know what to even do with them all!

I love pictures!

I love pictures! I love taking them, looking at them. I love pictures of me from when I was little, or pictures of Cory as a baby. I love seeing what my great great great grandparents looked liked or capturing that unforgettable memory. I had professional pictures taken of the boys shortly after they were born and we recently had our family pictures taken. The photographer is actually a friend here in our ward. She did an amazing job! If anyone in the San Diego area wants pictures, let me know and I will give you her info. Anyway, I just recently printed all the pictures and had them framed and this is the result:















Yes, the frame on the left says: "The Dalton Family" My mother doesn't quite have my passion for pictures. The last family portrait we had taken was about 10 years ago. The whole family will actually be together this May when my brother gets married (and before my sister leaves on her mission) so we are planning on getting one then.














I still need to print one picture each for Micah and Noah....that is why there is a blank one.

Recipies part II

Ok, so I didn't have too much success a few weeks ago asking for recipes. (thanks to those of you who did help me out). Not that it is a big deal, but I did get one good idea. My friend Diana (thank you Diana) has recipe blogs listed on her blog that you can link to. When people get a chance, they post recipes to share. They are all categorized by recipe type (main dish, dessert etc), so it makes it easy to find something when you need to.

I was thinking of creating a recipe blog of my own with all of you (well anyone who is interested) as contributers b/c I think it would be fun to share recipes with people I know instead of those I don't. So....if you are interested, please comment and if enough people want to do it, I will create a blog and send you all invitations to be contributers.

Recipes.....

So, although I have come to somewhat enjoy grocery shopping, I LOATHE trying to figure out what to eat each week. It always seem like "we just had that meal." I really seem to be struggling this week. So, I saw this on someone else's blog and thought it was a great idea! I will post two recipes: One that is REALLY good, but not necessarily simple, another that is good and simple. Then I will ask that anyone who writes them down leave two (in the comments) of their own for me (and other readers) to use. I would LOVE it if I got at least 7 by tonight since I need to go shopping tomorrow.....

Chicken Corn Chowder by Jonelle Shields:
(This is SO SO good...we serve it with cornbread)

8 slices bacon, cooked
1-2 ckn breasts, cubed (enough to make 1-2 cups cubed chicken)
1 onion, chopped
2 cloves garlic, minced
2 Tb butter
2 chicken bouillon cubes
1 c. hot water
1 tsp ground cumin
2 c. milk
2 c. mont.jack cheese, shredded
1 (14 oz) can creamed corn
1 (4 oz) can diced green chilies, undrained
1/4 tsp Tabasco sauce
1 tomato, de-seeded and chopped
handful of chopped fresh cilantro

1. Cook bacon in frying pan, chop, set aside. Pour out grease.
2. Add butter, chicken, onion and garlic to pan and cook until chicken is just cooked through
3. Dissolve bouillon in hot water. Put in large pot. Add chicken mixture and cumin. Bring to a boil. Reduce heat, cover and simmer for 5 min.
4. Add milk, cheese, chilies, corn and Tabasco. Stir over low heat until cheese melts
5. Stir in tomatoes and cilantro.

Easy, Tasty Stir Fry by Kristy Marsh:
(This is super good too, but VERY easy and quick; serve over rice)

2-3 chicken breast, cubed
Olive Oil
Your choice of favorite frozen stir fry veggies (enough to fill up a good size frying pan)

Sauce:
6 Tbsp soy sauce
4 Tbsp. sugar
1 1/3 c. water
3 Tbsp cornstarch dissolved in 2 Tbsp water

1. Steam veggies (I do it in the microwave)
2. While veggies are steaming, heat 1-2 Tbsp olive oil in a large skillet. Add chicken and cook until no longer pink
3. To make sauce: combine all ingredients in a sauce pan and cook on med-high, stirring constantly until sauce thickens and darkens (about 5 min)
4. Pour sauce over chicken and veggies

Super Cool

Ok, so maybe most of you already know about this, but I didn't and i think it is such a GREAT idea, I just wanted to share....

I just found out from a friend that you can have your blog printed in a nice hardbound book for a fairly reasonable price (in my opinion) ?!?!....i think we are going to do it once a year. This will also motivate me to post a little more often and be a little more detailed. I guess depending who you are that could be a good thing or a bad thing.....

Grateful...

Thanksgiving was wonderful! We spent it in Thousand Oaks with Cory's family and had a great time. I have always loved Thanksgiving as it affords an opportunity to ponder those things for which I am most grateful. I didn't take much time to do that last Thursday. I guess I was a little busy with babies, but I took a walk along the beach today and had some time to "count my many blessings." Here is a partial list:

The gospel, especially the Atonement and the effect it has in my life. It has changed me and allowed me to be more accepting of others as they struggle to change as well. It offers so much hope...most importantly, the hope that I can change/become better and more than who I currently am. Not many people on this earth have my understanding of God's plan...and I still have so much learn

The power of God in my life whether that is manifest through a priesthood blessing, the Gift of the Holy Ghost, ordinances, the scriptures, or the temple. How many people have such ready access to God's power?

My wonderful husband. He understands/accepts/fulfills his responsibility as the provider for our family. He also loves me and is always willing to sacrifice for me. He makes me laugh more than anyone I know and has a way of getting me to relax and enjoy life a little more. (for those of you who know me, you know why this is so amazing) He makes regular efforts to understand me better and change himself in order to make me happier. I don't really know that many women can truly say that these days.

My beautiful boys. The fact that they were conceived. The fact that they are here. The fact that they are perfectly healthy. The opportunity the Lord has given me to do my best to teach them of his love and plan. I can think of no greater blessing than the opportunity to be a mother, and it is a privilege that not everyone gets in this life.

My parents. Being raised in a home where I regularly felt the spirit, and the effect that has had in my life. I am coming to realize more and more what amazing people my parents are. There is an amazing spirit in their home and I am slowly coming to understand how hard they have worked/are working to make it that way. My parent put nothing before each other and their children. Few parents take their responsibility as seriously as mine do.

My siblings. I love each of my brothers and sisters. I would call them my dearest friends. We can laugh, cry, and play together, and best of all we can discuss the gospel and I can learn from them. How many people really like all their siblings?

My husband's family. I truly consider them family, and I believe I was meant to become a member of their family. I enjoy being with them. I admire them. I have learned so much from them. I am comfortable in their home and feel loved and accepted by them. They are good. They want to be better and they care about me. I am motivated by their individual examples. We have fun together and I always look forward to seeing them. I believe few people have such a great relationship with their in-laws.

My health. I haven't always had it, so it means a lot. I have been incredibly healthy during my pregnancy and after and it has allowed me to enjoy the process more. With all the diseases/problems that exist, I am grateful for my health.

Living in the USA, and the opportunities that affords: I can worship as I want, learn and improve myself as I wish, speak my mind, and live free of oppression. How few people on this earth can claim the same privileges!

And now some less significant, but fun things:

*the smell of the beach that reminds me of my husband b/c he loves it so much
*the sound of water and the peace it can bring me
*baby stretches, baby body parts (mini noses, hands, toes, tongues, ears), baby smiles and coos, *Chocolate ice cream and berries
*hot baths and a good book
*blogs/staying in touch with friends
*long walks and fresh air
*naps
*the smell on rainy days
*otter pops
*music and it's ability to affect my mood
*The beauty of the world we live in and the evidence that is of God's love
*Good books

Overall, I feel that I belong to a very select and blessed group of people. I can't even put into words how grateful I am. Where much is given, much is required. I feel like my commitment to do God's will and bless the lives of others has been renewed as I have thought about all these blessings.

San Diego Fires

Just want to let everyone know we are not directly effected by all the fires right now in San Diego County. There's one north of us about 40 miles (going to Del Mar now) and one southeast of us. The only thing effecting us now is the air quality for the boys. Every once in a while it gets a little hard for them to breathe. Sounds like they have asthma. We're keeping the windows closed and the AC on, staying indoors. School has been canceled for me on Monday and today, maybe Wednesday too. It's nice because I've been able to stay home and help Misty with the boys.

Welcome!

So, Cory and I have been using our families blog sites for quite a while now, but decided that it might be fun to have our own site for other friends etc...We have enjoyed reading our friends blogs and being able to stay in touch that way. So, here it goes!

A quick update for those of you we haven't talked to in a while....we recently moved to San Diego, CA for Cory to start law school. He had his first week of classes this last week and is doing well so far. He is gone M-F from 6 am-8 pm and Sat from 7 am - 1 or 2 pm. He has 5 classes and his teachers range from awesome/easygoing to crazy/obsessive. It is a little overwhelming, but he knows how to work hard and we are sure he will do really well. He would eventually like to do In-house council for a business with international ties and continue to use his Mandarin.

We are also expecting twins boys anytime! They are miracle babies as we were told by many specialists/2 failed IVF cycles that we would never have children. We are extremely grateful for this opportunity. I am 35 weeks pregnant (8 mo) and the Dr says it is now safe for me to deliver anytime. We are both very anxious/excited as we can't wait to meet these two little boys. We plan on naming them Micah Regas and Noah Dalton (Regas is Cory's grandparent's last name and they had no boys, so we are carrying on the name for them...it is also Cory's middle name. Dalton is my maiden name)

I guess that is all our big news/update type stuff. I've posted some pics of some of the eventful things that have happened the last few months and we will post more fun little stuff as it happens!
